Warabi mochi is a traditioanl Japanese confectionery (wagashi) that is made using brackenstarch instead of glutinous rice, with a very soft, melt-in-your-mouth texture. This particular variety from Kouryokuen is cooked in a copper pot. It comes with fiber-rich roasted soybean flour (kinako) to cover the mochi and give it a nutty flavor, and brown sugar syrup (kuromitsu) to drizzle on top. You can enjoy it chilled or warmed.
